The “Azzuleddi” in Aggese, are a typical dessert prepared in the days near the carnival, but the recipe is so good, that we often wonder why we have to wait for that period! In fact, being fried, you can not always eat it, but we do say that every now and then a rule can be broken! So, if you want to prepare something delicious, read our recipe and try to make them right away!

Recipe Azzuleddi


  • 1 kg. of flour (type 00)
  • 250 g. of lard
  • 2 eggs
  • 200 g. of sugar
  • Zest of orange or lemon
  • Zest of orange or lemon
  • 1 pinch of salt
  • Oil for frying (peanut seed)
  • Honey

In the flour and on a work surface, knead the softened lard with the eggs and sugar; add some water to mix, trying to create a sustained and homogeneous dough. Let the dough rest and then proceed with the preparation of the braids. Stretch long cylinders of dough about 1 cm thick and cut them to about 15/16 cm. Then bend them on themselves and with the palm of the hand, without crushing them, create braids. Pinch the end to not let them reopen. Now fry in plenty of hot oil, drain well and pass them in honey, melted in a bain-marie.
